Pumpkin Spice Cupcakes
Monday evening JCK and I decided to make a dessert for our friends that began their medical school exams the following day. We tossed around the idea of cookies and brownies but ultimately settled for Pumpkin Spice cupcakes. What a perfect way to rake in Autumn!
The recipe is very easy and doesn’t take much time at all! You don’t even need to have eggs or oil in you pantry, now that’s easy and a plus. And trust me, they’ll turn out amazing.
What You’ll Need:
- 1 Box Yellow Cake Mix
- 1 Can 100% Pure Pumpkin (we used fresh pumpkin)
- 1 Pinch of Cinnamon
- 1 Pinch of Pumpkin Spice
- Cream Cheese Frosting

Combine the cake mix, cinnamon and pumpkin spice and give it a good swirl.

Next, add in your pumpkin and mix it all together so that all the ingredients are mixed well and ready to be placed in the cupcake cake tin. Not too much in each, just a normal spoon full will do.

Place them in the oven for about 20 minutes each at 350 degrees. Let them cool and then frost them and add a pinch of cinnamon to top them off!
Enjoy! Oh, and pop in Hocus Pocus or something really fun.
